A delicious and healthy twist on the classic Italian favorite, featuring layers of zucchini, seasoned ground turkey, and creamy cheese, all baked to perfection.

Ingredients

  • 3 medium Zucchini, sliced lengthwise (1/4 inch thick)
  • 1 lb Ground turkey
  • 1 small Onion, diced
  • 3 Garlic cloves, minced
  • 1 tbsp Olive oil
  • 1 cup Tomato sauce
  • 1 tbsp Tomato paste
  • 1/2 tsp Dried oregano
  • 1/4 tsp Crushed red pepper
  • 1 cup Cottage cheese (or ricotta)
  • 1 Egg
  • 1/4 cup Grated Parmesan
  • 1 pinch Nutmeg
  • 1 1/2 cups Shredded mozzarella
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Slice the zucchini lengthwise into ¼ inch thick pieces and sprinkle with salt. Let them sit for 15-20 minutes to draw out excess moisture, then pat them dry with paper towels.
  2. Preheat the oven to 375°F (190°C). In a skillet over medium heat, add olive oil and sauté the diced onion and minced garlic until fragrant and translucent, about 2-3 minutes.
  3. Add the ground turkey, oregano, crushed red pepper, salt, and black pepper to the skillet. Cook until the turkey is browned, breaking it into smaller pieces with a spoon, about 5-7 minutes.
  4. Stir in tomato sauce and tomato paste, then reduce heat and let simmer for 5 minutes, allowing flavors to meld together.
  5. In a mixing bowl, combine cottage cheese, egg, grated Parmesan, pinch of nutmeg, and a little salt to create a creamy mixture.
  6. In the greased baking dish, layer a third of the turkey sauce, followed by a layer of zucchini, and then half of the cheese mixture. Repeat the layers, finishing with a layer of zucchini topped with the remaining turkey sauce and shredded mozzarella.
  7. Bake uncovered in the preheated oven for 35-40 minutes, or until the cheese is bubbly and golden.
  8. Once baked, remove from the oven and let rest for 10-15 minutes before slicing. Garnish with fresh basil before serving warm.

Notes

For a vegetarian option, replace the ground turkey with lentils or mushrooms. Letting the lasagna rest before slicing helps with cleaner pieces.
