Ingredients

  • 1 cup red cabbage, thinly sliced
  • 1 cup carrots, grated
  • 1/2 cup green onion, chopped
  • 1/2 cup toasted nuts or seeds (sliced almonds, sunflower seeds, or pepitas)
  • 1/2 cup dried cranberries or chopped apple

Instructions

  1. Combine the broccoli slaw mix, red cabbage, carrots, green onion, nuts or seeds, and dried fruit in a large bowl.
  2. In a separate jar, mix lemon juice, olive oil, honey or maple syrup, Dijon mustard, salt, and pepper to create the vinaigrette.
  3. Pour the dressing over the slaw and toss to combine about 15-30 minutes before serving for best crunch.
  4. Serve chilled or at room temperature, keeping nuts separate until ready to eat.
