  • 1 cup Bell peppers, diced

  • 1 cup Shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it lightly or using muffin liners.
  2. Whisk together the eggs and milk until fully combined, ensuring a fluffy mixture.
  3. Stir in the diced bell peppers, chopped spinach, and diced onion, along with salt and pepper to season.
  4. Fold in the cheese if using, for added creaminess and flavor.
  5. Pour the egg mixture evenly into the muffin cups, filling each about two-thirds full to prevent overflow.
  6. Bake for 20-25 minutes, or until the muffins are set and lightly golden on top.
  7. Let them cool for a few minutes in the pan before carefully removing them. Serve warm for the best flavor.

Notes

Don’t overfill the muffin cups to avoid overflow. For a lighter version, use egg whites instead of whole eggs.
