- 3-4 lb beef roast
- 2 tablespoons olive oil
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- 2 cloves garlic, smashed
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 2 sprigs fresh rosemary
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 cup heavy cream
- Salt and black pepper to taste
- 1 tablespoon Worcestershire sauce
Instructions
- Prepare the roast by patting it dry with paper towels and seasoning generously with kosher salt, black pepper, garlic powder, onion powder, thyme, and rosemary.
- Heat olive oil in a skillet over medium-high heat and sear the roast on all sides for 3-4 minutes.
- Transfer the seared roast to a roasting pan and add smashed garlic, fresh rosemary sprigs, beef broth, and Worcestershire sauce.
- Roast in the oven at 325°F for about 120-180 minutes, or until the internal temperature reaches 135°F for medium-rare.
- Remove the beef from the oven and allow it to rest for at least 20 minutes.
- Make the gravy by melting butter in the same skillet, whisking in flour, slowly adding reserved beef broth, stirring in heavy cream and Worcestershire sauce, and seasoning to taste.
