Ingredients

  • 2 cups grated zucchini
  • 1 cup almond flour
  • 1/2 cup applesauce
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the grated zucchini and applesauce in a large mixing bowl.
  3. Crack in the eggs and add vanilla extract, stirring until well incorporated.
  4. Whisk together almond flour, baking soda, baking powder, salt, and cinnamon in another bowl.
  5. Add the dry mixture to the zucchini mixture and stir until combined.
  6. Fold in the nuts, if using.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the zucchini bread cool in the pan for a few minutes before transferring to a wire rack to cool completely before slicing.

Notes

Use freshly grated zucchini and allow the loaf to cool completely for best texture.
