Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • 1 cup cherry tomatoes or 2 chopped ripe tomatoes
  • 8 oz fresh mozzarella (pearls or sliced)
  • 1/2 cup fresh basil
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Balsamic glaze (optional)

Instructions

  1. Pat the chicken dry with paper towels and season with salt, pepper, and Italian seasoning.
  2. Heat a skillet over medium-high heat and add olive oil. Add the chicken and cook until golden, about 4-5 minutes per side.
  3. Add garlic to the pan for about 30 seconds, then add the tomatoes. Cook until softened and juices are released.
  4. Turn the heat to low, top the chicken with mozzarella, and cover for 2-3 minutes until cheese melts.
  5. Finish with fresh basil and balsamic glaze if desired. Serve while warm.

Notes

Pound the chicken for even cooking. Use medium heat to avoid watery tomatoes and add basil at the end for freshness.
