Seafood Pasta Salad

Ingredients

  • 12 oz Small pasta (elbow macaroni, shells, or rotini)
  • 1 cup Cooked shrimp, peeled and deveined
  • 1 cup Imitation crab meat, chopped
  • 1 cup Celery, diced
  • 1 Red bell pepper, diced
  • 1/2 Red onion, finely diced
  • 3/4 cup Mayonnaise
  • 1/4 cup Sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • 2 tablespoons Fresh parsley, chopped
  • A pinch Paprika for garnish (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water following the package directions until it reaches an al dente texture. Drain and rinse it under cold water to cool.
  2. If using fresh shrimp, cook them until pink, or chop pre-cooked shrimp into bite-sized pieces.
  3. Dice the celery, red bell pepper, and red onion, then chop the parsley.
  4. In a small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, Old Bay seasoning, salt, and pepper until smooth.
  5. In a large mixing bowl, combine the cooled pasta, shrimp, imitation crab meat, diced vegetables, and the creamy dressing. Toss everything until well coated.
  6. Cover and refrigerate for at least one hour before serving. Just before serving, sprinkle with fresh parsley and paprika, if desired.

Notes

Chill before serving for best flavor. Substitute fresh crab for imitation crab for a more luxurious option.
