- 1 lb chicken thighs (or breasts)
- 2 tbsp olive oil
- 1 lemon (juiced)
- 3 cloves garlic (minced)
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup rice or quinoa
- 1 cucumber (diced)
- 1 cup tomatoes (diced)
- 1/2 red onion (sliced)
- 4 oz feta cheese (optional)
- Tzatziki sauce (store-bought or homemade)
Instructions
- Start the grain. If using rice, quinoa, or couscous, get it cooking first.
- Marinate the chicken for 10-15 minutes with olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Cook the chicken in a hot skillet until browned and cooked through, then let rest for a few minutes.
- Chop the cucumber, tomatoes, and red onion while the chicken cooks.
- Build the bowls starting with grains, topped with chicken and all the veggies. Drizzle with sauce and a squeeze of lemon.
Notes
Store ingredients separately for meal prep to keep everything fresh. Chicken and grains last 3-4 days, while chopped veggies are best within 2 days.
