A fast and fresh recipe for Greek Chicken Bowls with juicy chicken, crisp veggies, and a tangy sauce, perfect for weeknight dinners.

Ingredients

  • 1 lb chicken thighs (or breasts)
  • 2 tbsp olive oil
  • 1 lemon (juiced)
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup rice or quinoa
  • 1 cucumber (diced)
  • 1 cup tomatoes (diced)
  • 1/2 red onion (sliced)
  • 4 oz feta cheese (optional)
  • Tzatziki sauce (store-bought or homemade)

Instructions

  1. Start the grain. If using rice, quinoa, or couscous, get it cooking first.
  2. Marinate the chicken for 10-15 minutes with olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Cook the chicken in a hot skillet until browned and cooked through, then let rest for a few minutes.
  4. Chop the cucumber, tomatoes, and red onion while the chicken cooks.
  5. Build the bowls starting with grains, topped with chicken and all the veggies. Drizzle with sauce and a squeeze of lemon.

Notes
