- 2 to 3 cups cooked shredded chicken (rotisserie chicken is perfect)
- 3/4 cup BBQ sauce (use your favorite)
- 2 tablespoons mayo or ranch (optional but highly recommended)
- 1 teaspoon pickle juice or a small splash of apple cider vinegar
- 12 slider rolls (Hawaiian rolls work great)
- 6 to 8 slices cheese (cheddar, provolone, mozzarella, pepper jack)
- 2 to 3 tablespoons melted butter
- Optional: sliced pickles, thin red onion, jalapenos, coleslaw
Instructions
- Heat your oven to 350°F.
- Mix the filling by stirring together shredded chicken, BBQ sauce, mayo or ranch, and pickle juice or vinegar.
- Prep the rolls by slicing the whole slab in half horizontally.
- Build the sliders by layering cheese, BBQ chicken mixture, and additional toppings, followed by the tops of the rolls.
- Butter the tops with melted butter and sprinkle with seasoning if desired.
- Bake covered loosely with foil for 12 minutes, then uncover and bake for another 5 to 8 minutes until golden and cheese is melted.
Notes
If using a very saucy BBQ sauce, don’t drown the chicken; add more chicken or cheese if it gets too soupy. Leftovers can be stored in an airtight container and refrigerated for up to 3 days.
