- 2 tablespoons vegetable oil
- 4 cups chopped bok choy
- 1 cup julienned carrot
- 1 cup sliced bell pepper
- 3 cloves minced garlic
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt to taste
- Pepper to taste
- Sesame seeds (optional) for garnish
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the julienned carrots and sliced bell peppers and stir-fry for 3 to 4 minutes until they begin to soften.
- Add the chopped bok choy and continue to stir-fry for another 3 to 4 minutes until the bok choy is tender but still bright green.
- Pour in the soy sauce and sesame oil, tossing everything to combine. Season with salt and pepper to taste.
- Remove from heat and transfer to a serving dish. Garnish with sesame seeds if desired.
Notes
Cut vegetables evenly for consistent cooking. Can substitute bok choy with kale or Swiss chard.
