A quick and healthy vegetable dish featuring fresh baby bok choy enhanced with a zesty ginger sauce.

Ingredients

  • 6 Baby bok choy
  • 2 tbsp Olive oil
  • 1/4 cup Light soy sauce
  • 1/2 tbsp Fish sauce
  • 1/2 Lime juice
  • 1 tbsp Sesame oil
  • 1 tsp Brown sugar
  • 2 tbsp Pickled ginger, finely chopped
  • Sesame seeds for topping

Instructions

  1. Preheat your skillet over medium heat and add the olive oil.
  2. Add the halved or quartered baby bok choy to the skillet and sauté for about 3 to 4 minutes until the leaves become tender.
  3. In a small bowl, mix together the light soy sauce, fish sauce, lime juice, sesame oil, brown sugar, and pickled ginger.
  4. Pour the ginger sauce over the sautéed bok choy and stir well to coat, cooking for an additional minute.
  5. Serve hot, garnished with sesame seeds on top.

Notes

Don’t overcook the bok choy for the best texture.
