Ingredients

  • 1 cup cherry tomatoes, halved (optional)
  • 1 avocado, sliced (optional)
  • 2 to 3 tablespoons plain Greek yogurt or light ranch
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Optional toppings: green onions, cilantro, shredded cheese, blue cheese crumbles

Instructions

  1. Warm your chicken in a skillet over medium heat with the buffalo sauce until it bubbles.
  2. Prep your rice by reheating it in the microwave with a splash of water.
  3. Mix your quick drizzle of Greek yogurt, ranch seasoning, and lime juice.
  4. Build the bowls with rice first, then lettuce, buffalo chicken, and toppings.
  5. Finish with a drizzle of sauce and extra buffalo if desired.
