Fresh Rice Paper Spring Rolls with Peanut Sauce

Ingredients

  • 1 cup spring mix lettuce
  • 1 cup rice vermicelli noodles, cooked and cooled
  • 1 cup red cabbage, thinly shredded
  • 1 cup cucumber, julienned
  • 1 cup carrot, julienned
  • 1 cup mango, sliced (fresh or thawed frozen)
  • 1 medium avocado, sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh Thai basil (optional)
  • 8 sheets rice paper wrappers
  • 1 cup bell peppers, thinly sliced
  • 1 cup bean sprouts
  • 1 cup air-fried or pan-fried tofu (seasoned)
  • 1/2 cup creamy peanut butter
  • Juice of 1 lime
  • 1 Tbsp rice vinegar
  • 1 Tbsp Sriracha (or to taste)
  • 1 Tbsp maple syrup
  • 1/2 cup water

Instructions

  1. Start by washing, slicing, and arranging all your filling ingredients like vegetables, herbs, and tofu on a large platter or in bowls for easy access.
  2. Fill a large bowl or pie plate with warm water. Dip one rice paper wrapper into the water for about 5 to 10 seconds until it becomes just pliable, then take it out and lay it smooth-side down on a clean surface or cutting board.
  3. Place a small amount of spring mix on the lower half of the wrapper. Add a few rice noodles followed by the vegetables, mango, avocado, and the herbs you desire.
  4. Fold the sides of the wrapper in, then roll tightly from the bottom up, tucking the ingredients together as you go. Repeat with the remaining rice paper wrappers and fillings until all are assembled.
  5. Serve the fresh spring rolls immediately with your favorite dipping sauce. For the peanut dipping sauce, simply whisk the peanut butter, lime juice, rice vinegar, Sriracha, maple syrup, and water in a bowl until smooth. Taste and adjust the seasoning if needed, then serve in small bowls alongside your fresh spring rolls.

Notes

Soak rice paper just until pliable for easier rolling. Let the completed spring rolls chill in the refrigerator for 10 minutes for a refreshing bite.
