Ingredients

  • 8 sheets rice paper wrappers
  • 4 scallions, chopped
  • 1 shallow dish worth water
  • Pinch of salt
  • Cooking oil for frying

Instructions

  1. Prepare a shallow dish with warm water and soak each rice paper wrapper for a few seconds until softened.
  2. Lay the softened wrapper flat on a clean surface and sprinkle with chopped scallions and a pinch of salt.
  3. Fold the wrapper to enclose the scallions, forming a pancake shape.
  4. Heat oil in a pan over medium heat until hot.
  5. Place the pancake in the hot oil and cook until golden brown and crispy, about 2-3 minutes per side.
  6. Remove from the pan and place on paper towels to drain excess oil before serving. Enjoy while hot.
