Ingredients

Units Scale
  • 2 cups Fresh rhubarb, chopped
  • 1 cup Granulated sugar
  • 1 cup Filtered water
  • 1 tablespoon Freshly squeezed lemon juice
  • Chilled sparkling water to taste
  • Ice cubes as needed

Instructions

  1. In a medium saucepan, combine the fresh rhubarb, sugar, and filtered water to start the syrup.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 to 15 minutes until the rhubarb becomes tender.
  3. Use a fine mesh sieve to strain the mixture, removing the solids and pressing the rhubarb to extract as much juice as possible.
  4. To the strained syrup, stir in the freshly squeezed lemon juice for a zesty kick.
  5. To serve, fill a glass with ice cubes, pour in the rhubarb syrup to your taste, and top it with chilled sparkling water.
  6. Stir gently, mix it up, and enjoy your refreshing Rhodes Soda!

Notes

Use fresh rhubarb for the best flavor and consider experimenting with flavors like mint or ginger.
