  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×9 inch baking dish.
  2. Combine all-purpose flour and 1/4 cup of sugar in a mixing bowl. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press this mixture into the bottom of the prepared baking dish to form your crust. Bake for about 10 minutes until it is lightly golden.
  4. Mix together the diced rhubarb, remaining sugar, cornstarch, and salt in another bowl until well combined.
  5. Whisk together the eggs and vanilla extract in a separate bowl. Add this mixture to the rhubarb mixture and stir until well mixed.
  6. Pour the rhubarb filling evenly over the baked crust.
  7. Bake in the preheated oven for 35-40 minutes until the filling is set with slight bubbling around the edges.
  8. Allow the bars to cool completely in the dish before cutting into squares for serving.
