- 2 cups diced rhubarb
- 1 cup all-purpose flour
- 1 1/4 cups sugar
- 1/2 cup unsalted butter, softened
- 2 tablespoons cornstarch

Instructions
- Preheat your oven to 350°F (175°C) and grease your 9×9 inch baking dish.
- Combine all-purpose flour and 1/4 cup of sugar in a mixing bowl. Cut in the softened butter until the mixture resembles coarse crumbs.
- Press this mixture into the bottom of the prepared baking dish to form your crust. Bake for about 10 minutes until it is lightly golden.
- Mix together the diced rhubarb, remaining sugar, cornstarch, and salt in another bowl until well combined.
- Whisk together the eggs and vanilla extract in a separate bowl. Add this mixture to the rhubarb mixture and stir until well mixed.
- Pour the rhubarb filling evenly over the baked crust.
- Bake in the preheated oven for 35-40 minutes until the filling is set with slight bubbling around the edges.
- Allow the bars to cool completely in the dish before cutting into squares for serving.
Notes
Ensure rhubarb is well-drained for the best texture. You can also mix in strawberries for a sweeter twist.
