Ingredients

  • 1 sheet flaky puff pastry
  • 2 cups chopped rhubarb
  • 1 cup softened cream cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 beaten egg
  • All-purpose flour for dusting

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and cut into squares.
  3. Combine the chopped rhubarb, cream cheese, sugar, and vanilla in a mixing bowl.
  4. Spoon the rhubarb mixture onto the center of each pastry square.
  5. Fold the corners of the pastry over the filling and press edges to seal.
  6. Place pastries on a parchment-lined baking sheet.
  7. Brush tops with beaten egg for a golden color.
  8. Bake for 20-25 minutes, until golden brown.
  9. Cool slightly before serving warm or at room temperature.

Notes

For better flakiness, use cold puff pastry. Substitute strawberries for variations.
