- 1 sheet flaky puff pastry
- 2 cups chopped rhubarb
- 1 cup softened cream cheese
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 beaten egg

Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface and cut into squares.
- Combine the chopped rhubarb, cream cheese, sugar, and vanilla in a mixing bowl.
- Spoon the rhubarb mixture onto the center of each pastry square.
- Fold the corners of the pastry over the filling and press edges to seal.
- Place pastries on a parchment-lined baking sheet.
- Brush tops with beaten egg for a golden color.
- Bake for 20-25 minutes, until golden brown.
- Cool slightly before serving warm or at room temperature.
Notes
For better flakiness, use cold puff pastry. Substitute strawberries for variations.
