- 4 Boneless, skinless chicken breasts
- 2 cups Fresh spinach
- 1/2 cup Sun-dried tomatoes, chopped
- 1 cup Heavy cream
- 1 cup Chicken broth
- 2 tablespoons Olive oil
- 2 cloves Garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Season the chicken with salt and pepper. Cook in the skillet for 5-7 minutes on each side until golden brown and cooked through. Remove and set aside.
- Add minced garlic to the skillet and sauté for 30 seconds. Stir in chopped sun-dried tomatoes and cook for another minute.
- Pour in chicken broth and heavy cream, then add Italian seasoning. Bring to a simmer.
- Return chicken to the skillet and add fresh spinach. Simmer for 7-10 minutes until the chicken is fully cooked and the sauce thickens. Serve hot with grated Parmesan on top.
Notes
This dish can be customized with different herbs and can be served with garlic bread or over pasta.
