Ingredients

  • 1 cup All-purpose flour
  • 1/2 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Buttermilk
  • 1/4 cup Unsalted butter, melted
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Ground cinnamon
  • 1/4 cup Brown sugar
  • Powdered sugar for drizzling (optional) to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin to prevent sticking.
  2. Combine the flour, granulated sugar, baking powder, baking soda, and salt in a bowl. Stir well to combine.
  3. Whisk together buttermilk, melted butter, egg, and vanilla extract in another bowl until fully combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just mixed. Be careful not to overmix.
  5. Mix the brown sugar and ground cinnamon together to create the cinnamon sugar mixture.
  6. Fill each muffin tin halfway with the batter, sprinkle some of the cinnamon-sugar mixture on top, then spoon the remaining batter over it.
  7. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool for a few minutes. Drizzle with powdered sugar if desired, then serve warm.

Notes

Don’t overmix the batter for light, fluffy muffins. Use almond milk instead of buttermilk for a dairy-free option.
