Ingredients

  • 1 Lime (juiced)
  • 1 tablespoon Chili powder
  • 1 tablespoon Olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish to taste

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the shrimp to the pan, sprinkle with salt, pepper, and chili powder, and cook until they turn pink and opaque, about 3-4 minutes.
  3. Stir in the corn and continue cooking for an additional 5-7 minutes until the corn is heated through.
  4. Mix together the feta cheese, mayonnaise, and lime juice in a separate bowl to create a creamy sauce.
  5. Pour the creamy feta sauce over the shrimp and corn mixture, stirring gently to combine.
  6. Serve warm, garnished with fresh cilantro.

Notes

Don’t overcook the shrimp for best texture. Use Greek yogurt instead of mayonnaise for a lighter version.
