- 2 Boneless, skinless chicken breasts
- 2 Medium zucchinis, sliced
- 1 cup Cherry tomatoes, halved
- 1 Onion, sliced
- 1 cup Shredded cheese (mozzarella or feta)
- 2 tablespoons Olive oil
- 1 teaspoon Garlic powder
- 1 teaspoon Oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the sliced zucchinis, halved cherry tomatoes, and sliced onion in a baking dish.
- Drizzle the vegetable mixture with olive oil and season with garlic powder, oregano, salt, and pepper, then toss to combine well.
- Place the chicken breasts on top of the seasoned veggie mixture.
- Sprinkle the shredded cheese over both the chicken and the vegetables.
- Bake for 25 to 30 minutes or until the chicken is cooked through and the vegetables are tender.
- Serve hot and enjoy.
