Ingredients

  • 2 Boneless, skinless chicken breasts
  • 2 Medium zucchinis, sliced
  • 1 cup Cherry tomatoes, halved
  • 1 Onion, sliced
  • 1 cup Shredded cheese (mozzarella or feta)
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the sliced zucchinis, halved cherry tomatoes, and sliced onion in a baking dish.
  3. Drizzle the vegetable mixture with olive oil and season with garlic powder, oregano, salt, and pepper, then toss to combine well.
  4. Place the chicken breasts on top of the seasoned veggie mixture.
  5. Sprinkle the shredded cheese over both the chicken and the vegetables.
  6. Bake for 25 to 30 minutes or until the chicken is cooked through and the vegetables are tender.
  7. Serve hot and enjoy.
