- 1 pound shrimp, thawed and tails removed
- 3 Tbsp olive oil, divided
- 1 tsp smoked paprika
- 1/2 tsp chili flakes
- Salt and pepper, to taste
- 5 ounces (140 grams) dry pasta
- 5 cloves garlic, minced
- 4 cups spinach
- Juice and zest of 1/2 lemon
- 1/4 cup fresh basil or parsley, chopped
- Fresh parmesan, for serving (optional), to taste
Instructions
- Thaw the shrimp, remove the tails and shells, mince the garlic, zest the lemon peel, and chop the basil or parsley.
- Bring a large pot of salted water to a boil for the pasta. Cook the pasta according to package directions, then drain and return it to the pot.
- Pat the shrimp dry with a paper towel and toss them in a small bowl with 1 tablespoon of olive oil, smoked paprika, chili flakes, salt, and pepper until well-coated.
- Heat a large pan over medium-high heat. Add the shrimp in batches and cook for 1 to 2 minutes per side until opaque, then remove and set aside.
- Add another tablespoon of olive oil to the skillet and sauté the minced garlic for 2 to 3 minutes until fragrant.
- Stir in the spinach and cook until just wilted, about 1 to 2 minutes.
- Turn off the heat and add the drained pasta, lemon zest, lemon juice, remaining olive oil, cooked shrimp, and chopped herbs. Toss to combine and season with salt and pepper to taste.
- Serve hot, garnished with parmesan cheese if desired.
Notes
For a low-carb version, use zucchini noodles instead of pasta. Add tomatoes or bell peppers for more color and nutrition.
