- 1 pound kielbasa, sliced
- 12 ounces pasta
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups spinach
Instructions
- In a large pot, add the sliced kielbasa and cook over medium heat until browned, about 5-7 minutes.
- Once the kielbasa is cooked, add the diced onion and minced garlic, cooking until softened, approximately 3-4 minutes.
- Stir in the uncooked pasta, chicken broth, diced tomatoes, and Italian seasoning. Raise the heat and bring the mixture to a boil.
- Once boiling, reduce the heat to a simmer and cover the pot. Continue cooking until the pasta is al dente, about 10-12 minutes.
- Finally, stir in the fresh spinach and cook just until it wilts, about 2 minutes. Season with salt and pepper to taste before serving.
Notes
For a lighter option, substitute kielbasa with turkey kielbasa or plant-based protein. Store leftovers in an airtight container in the fridge for up to three days.
