Easy One Pot Kielbasa Pasta

A flavorful and straightforward dish that combines savory kielbasa with tender pasta, vibrant spinach, and Italian seasoning, all cooked in one pot.

Ingredients

  • 1 pound kielbasa, sliced
  • 12 ounces pasta
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups spinach

Instructions

  1. In a large pot, add the sliced kielbasa and cook over medium heat until browned, about 5-7 minutes.
  2. Once the kielbasa is cooked, add the diced onion and minced garlic, cooking until softened, approximately 3-4 minutes.
  3. Stir in the uncooked pasta, chicken broth, diced tomatoes, and Italian seasoning. Raise the heat and bring the mixture to a boil.
  4. Once boiling, reduce the heat to a simmer and cover the pot. Continue cooking until the pasta is al dente, about 10-12 minutes.
  5. Finally, stir in the fresh spinach and cook just until it wilts, about 2 minutes. Season with salt and pepper to taste before serving.

Notes

For a lighter option, substitute kielbasa with turkey kielbasa or plant-based protein. Store leftovers in an airtight container in the fridge for up to three days.
