Instructions
- Combine the flour and salt in a mixing bowl. In another bowl, whisk together the eggs and milk until well blended. Gradually add the wet ingredients into the flour mixture, stirring until it forms a smooth batter.
- Bring a large pot of salted water to a boil. Using a spätzle maker or a colander, press the batter into the boiling water. Cook the spätzle until they rise to the surface, about 2 to 3 minutes. Remove the spätzle with a slotted spoon and set aside.
- Melt the butter in a skillet over medium heat and add the sliced onions, sautéing until they turn golden brown and caramelized.
- Combine the cooked spätzle with the melted cheese and sautéed onions in a large pot. Stir everything together until the cheese is gooey and melted.
- Season with salt and pepper to taste before serving hot. Garnish with chopped chives if desired.
Notes
Stir vigorously to avoid lumps in the batter. Use a mix of cheeses for varied flavors.
