- 4 Boneless, skinless chicken breasts
- 2 Ripe avocados, sliced
- 1 cup Cherry tomatoes, halved
- 1/4 cup Lime juice
- 2 tablespoons Olive oil
- 2 cloves Garlic, minced
- 1 teaspoon Chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Combine lime juice, olive oil, garlic, chili powder, salt, and pepper in a bowl to create a marinade.
- Add chicken breasts to the marinade and let soak for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Grill chicken breasts for about 6-8 minutes on each side or until fully cooked (internal temperature of 165°F).
- Place avocado slices directly on the grill for the last few minutes to warm.
- Remove chicken from the grill and top with grilled avocado slices and cherry tomatoes.
- Garnish with fresh cilantro before serving immediately.
Notes
Let the chicken marinate longer for more flavor. Serve with side salad or grilled vegetables.
