Instructions
- Preheat the oven to 400°F (200°C).
- Dice the potatoes into bite-sized pieces and place them in a bowl.
- Add olive oil, salt, and pepper to the potatoes and toss to coat evenly.
- Arrange the potatoes on a baking sheet in a single layer.
- Season the chicken breasts with salt and pepper, then place them on the baking sheet with the potatoes.
- Brush the honey BBQ sauce generously over the chicken breasts, ensuring they are well coated.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and potatoes are tender and golden.
- Remove from oven, garnish with fresh herbs if desired, and serve hot.
Notes
For a healthier option, substitute sweet potatoes for regular potatoes. You can also swap chicken for tofu for a vegetarian version.
