Quick and easy one-pan dinner that combines ground turkey, beans, corn, and cheese for a delicious taco-inspired meal.

Ingredients

  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes or salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese
  • Optional toppings: sour cream, avocado, shredded lettuce, pickled jalapenos, lime wedges, cilantro

Instructions

  1. Brown the ground turkey with chopped onion in a skillet over medium heat.
  2. Add minced garlic and taco seasoning, stir until combined.
  3. Mix in diced tomatoes and black beans, followed by the corn.
  4. Sprinkle shredded cheese on top and cover until melted.
  5. Serve with your choice of toppings and enjoy!

Notes

Great for leftovers and can be easily customized with different proteins or toppings. Freezes well without cheese.
