Ground Beef and Sweet Potato Skillet

Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 1 medium red onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced green chiles
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/2 cup water or broth
  • 1 cup cheddar cheese, shredded

Instructions

  1. Brown the ground beef and onion in a large skillet over medium-high heat until the beef is no longer pink.
  2. Add garlic and cook for about 30 seconds until fragrant.
  3. Stir in cumin, smoked paprika, chili powder, salt, and pepper for 30 seconds.
  4. Add diced bell pepper, green chiles, sweet potatoes, and tomatoes, then pour in water.
  5. Cover and let it simmer for about 15 minutes until sweet potatoes are tender.
  6. Sprinkle cheddar cheese on top and cover until melted.
  7. Serve with cilantro, avocado, and lime juice as toppings.

Notes

This recipe is forgiving; feel free to swap ground beef for turkey, chicken, or plant-based crumbles.
