- 1 lb ground beef
- 2 medium sweet potatoes, peeled and diced
- 1 medium red onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced green chiles
- 1 can diced tomatoes
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- Salt and pepper to taste
- 1/2 cup water or broth
- 1 cup cheddar cheese, shredded
Instructions
- Brown the ground beef and onion in a large skillet over medium-high heat until the beef is no longer pink.
- Add garlic and cook for about 30 seconds until fragrant.
- Stir in cumin, smoked paprika, chili powder, salt, and pepper for 30 seconds.
- Add diced bell pepper, green chiles, sweet potatoes, and tomatoes, then pour in water.
- Cover and let it simmer for about 15 minutes until sweet potatoes are tender.
- Sprinkle cheddar cheese on top and cover until melted.
- Serve with cilantro, avocado, and lime juice as toppings.
Notes
This recipe is forgiving; feel free to swap ground beef for turkey, chicken, or plant-based crumbles.
