Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup molasses
  • 1 cup hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. In a large bowl, whisk together flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt.
  3. In another bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each.
  4. Stir in the molasses.
  5. Gradually mix the dry ingredients into the wet ingredients, alternating with hot water until well combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60-70 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Serve with cream cheese frosting or a simple glaze for extra sweetness.
