- 1 sheet Puff Pastry
- 4 cloves Roasted Garlic
- 1 cup Mixed Vegetables
- 1 cup Parmesan Cheese, grated
- 1 Egg, for wash
- Olive Oil, to drizzle
- Salt & Pepper, to taste
- Fresh Herbs, optional
Instructions
- Preheat your oven to 400°F (200°C). Prepare the puff pastry on a baking sheet.
- Spread the roasted garlic over the puff pastry, leaving a border around the edges.
- Layer the mixed vegetables and sprinkle the grated Parmesan cheese on top.
- Fold the edges of the pastry over the filling. Brush the edges with beaten egg and drizzle olive oil on top.
- Bake for 25-30 minutes until golden brown and filling is bubbling.
Notes
Feel free to experiment with different vegetables or add proteins like chicken or chickpeas for variations. Pairs well with a salad or soup.
