Instructions

  1. Preheat your oven to 400°F (200°C). Prepare the puff pastry on a baking sheet.
  2. Spread the roasted garlic over the puff pastry, leaving a border around the edges.
  3. Layer the mixed vegetables and sprinkle the grated Parmesan cheese on top.
  4. Fold the edges of the pastry over the filling. Brush the edges with beaten egg and drizzle olive oil on top.
  5. Bake for 25-30 minutes until golden brown and filling is bubbling.
