- 4 Boneless, skinless chicken breasts
- 1.5 pounds Baby potatoes, halved
- 1 cup Chicken broth
- 1/2 cup Grated Parmesan cheese
- 4 cloves Garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/2 teaspoon Red pepper flakes (optional)
- 2 tablespoons Olive oil
- Fresh parsley for garnish (optional)
Instructions
- Start by washing and halving the baby potatoes.
- Mince the garlic and set it aside.
- Season the chicken breasts in a bowl with olive oil, Italian seasoning, salt, and pepper.
- Layer the halved potatoes in the bottom of the crockpot.
- Place the seasoned chicken on top of the potatoes.
- Pour the chicken broth over the chicken and potatoes.
- Sprinkle the minced garlic and grated Parmesan cheese on top.
- Cover the crockpot and cook on low for 6 to 7 hours or high for 3 to 4 hours.
- Finally, remove everything from the crockpot and garnish with fresh parsley if desired.

Use fresh garlic for the best flavor. This dish is perfect for meal prep!
