- 1 lb chicken breast or thighs, cut into bite-sized pieces
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 teaspoon Italian seasoning or dried parsley
- Optional: 1 tablespoon lemon juice, chili flakes, or grated Parmesan
Instructions
- Prep the chicken: Pat it dry with paper towels, then cut into bite-sized pieces.
- Season: Toss the chicken with salt, pepper, paprika, and Italian seasoning.
- Heat the pan: Use a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter.
- Sear the chicken: Add chicken in a single layer. Let it cook without moving for 2 to 3 minutes, then stir and continue until cooked through, about 6 to 8 minutes.
- Add the garlic butter: Turn heat down to medium-low. Add the rest of the butter and the minced garlic. Stir for 30 to 60 seconds until fragrant.
- Finish: Add optional lemon juice, parsley, or Parmesan. Taste and adjust salt.
Notes
Chicken thighs stay extra juicy, but chicken breast is great too if not overcooked. Do not overcrowd the pan for proper browning.
