- 8 ounces rotini pasta
- 6 slices turkey bacon, cooked and chopped
- 1 cup cherry tomatoes, halved
- 2 cups crisp romaine lettuce, chopped
- 1 cup shredded cheddar cheese (optional)
- 1/4 cup red onion, thinly sliced (optional)
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Greek yogurt
- 1 tablespoon lemon juice or vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
Instructions
- Cook your pasta in salted water until just done. Drain and rinse under cold water to cool it down fast.
- Cook the turkey bacon until crisp. Drain it on paper towels and chop it once cooled.
- Slice the tomatoes in half. Chop the lettuce, but keep it dry and set it aside for later.
- Mix the dressing in a big bowl: mayo, sour cream or Greek yogurt, a splash of lemon juice or vinegar, salt, pepper, garlic powder, and a tiny pinch of sugar.
- Toss the cooled pasta with the dressing first so it gets evenly coated.
- Fold in turkey bacon, tomatoes, and any extras like cheese or onion.
- Right before serving, stir in the lettuce so it stays crisp, then top with extra turkey bacon if you are feeling generous.
Notes
Keep lettuce separate until serving for maximum crispness. Add additional dressing just before serving if making ahead.
