  • 1/4 cup (50g) brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (120g) chopped toasted walnuts

Instructions

  1. Melt the unsalted butter in a medium saucepan over medium heat, stirring frequently until it turns golden brown and smells nutty, about 5 minutes. Remove from heat and let cool slightly.
  2. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  3. Mash the ripe bananas in a large mixing bowl until mostly smooth but slightly chunky.
  4. Add granulated sugar, brown sugar, eggs, and vanilla extract to the mashed bananas. Mix well until fully incorporated.
  5. Pour the cooled brown butter into the banana mixture while stirring to combine.
  6. Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Fold in the chopped toasted walnuts until evenly distributed.
  8. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool the bread in the pan for 15 minutes before transferring to a wire rack to cool completely before slicing.
