- 3 very ripe bananas, mashed (about 1 and 1/3 cups)
- 1/3 cup melted butter (or neutral oil)
- 1/2 cup brown sugar (or 1/3 cup if you like it less sweet)
- 2 eggs
- 1 and 1/2 teaspoons vanilla extract
- 1 and 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 1 and 1/4 cups blueberries (fresh or frozen)
- 1 teaspoon flour to toss with the blueberries
Instructions
- Heat the oven. Set it to 350°F. Grease your loaf pan or line it with parchment paper.
- Mix the wet ingredients. In a big bowl, mash the bananas until mostly smooth. Stir in melted butter, brown sugar, eggs, and vanilla.
- Add the dry ingredients. Sprinkle in flour, baking soda, salt, and cinnamon. Stir just until you do not see dry flour anymore. The batter should look lumpy and thick.
- Fold in blueberries. Toss blueberries with 1 teaspoon flour first, then gently fold them into the batter.
- Bake it. Pour into the pan and bake for 50 to 65 minutes. Start checking at 50 minutes.
- Cool it. Let it cool in the pan for 10 to 15 minutes, then lift it out and cool on a rack.
Notes
Allow to cool before slicing for best texture. Blueberry Banana Bread freezes well; wrap tightly for storage.
