Ingredients

  • 2 tsp baking powder
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 2 tbsp poppy seeds
  • 1 cup milk (dairy or non-dairy)
  • 1 egg
  • 2 tbsp melted butter or neutral oil
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract (optional)

Instructions

  1. Mix flour, baking powder, sugar, salt, and poppy seeds in a bowl.
  2. In another bowl, whisk milk, egg, melted butter, lemon zest, lemon juice, and vanilla.
  3. Pour wet into dry and stir until just combined. A few small lumps are totally fine.
  4. Let the batter rest 5 to 10 minutes while your pan warms up.
  5. Cook on a lightly buttered skillet over medium heat. Flip when you see bubbles and the edges look set.

Notes

For a simple lemon glaze, mix powdered sugar with a tiny splash of lemon juice and drizzle it on top.
