A fresh and colorful pasta salad loaded with garden vegetables and a bright homemade dressing, perfect for summer gatherings.

Ingredients

  • 12 ounces pasta (rotini or bowties)
  • 2 big handfuls cherry tomatoes, halved
  • 1 medium cucumber, chopped
  • 1 bell pepper, chopped
  • 1 red onion, thinly sliced
  • Olives (optional)
  • Feta crumbles or mini mozzarella balls
  • Fresh herbs (basil or parsley)
  • 1/2 cup olive oil
  • 1/4 cup red vinegar or lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or a pinch of sugar
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted water until just tender.
  2. Rinse the pasta under cool water and drain well.
  3. Chop the vegetables into bite-sized pieces.
  4. Shake up the dressing ingredients in a jar until well combined.
  5. Toss the pasta, vegetables, herbs, and cheese together in a large bowl.
  6. Chill for at least 30 minutes before serving.

Notes

For extra flavor, reserve some dressing to refresh the salad just before serving.
