Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2 cups milk (or dairy-free alternative)
  • 1/4 cup melted butter
  • 1/4 cup maple syrup (or brown sugar)
  • 1 teaspoon vanilla extract
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the oats, baking powder, cinnamon, and salt in a large bowl.
  3. Whisk together the eggs, milk, melted butter, maple syrup, and vanilla in another bowl.
  4. Fold in the blueberries by tossing them with a teaspoon of oats first.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Transfer the mixture to an 8 by 8-inch baking dish.
  7. Bake for 30-35 minutes, or until the edges are golden and the center is set.
  8. Let it rest for at least 10 minutes before slicing and serving.

Notes

Serve warm with toppings such as Greek yogurt, nuts, or maple syrup. Can be made ahead and reheated throughout the week.
