- 2 large Carrots, peeled and grated
- 2 medium Apples, cored and diced
- 1 cup Red cabbage, finely shredded

- 1/2 cup Walnuts or pecans, chopped

- 1/4 cup Plain Greek yogurt
- 1/4 cup Mayonnaise
- 2 tablespoons Fresh orange juice
- 1 tablespoon Lemon juice
- 1 teaspoon Honey (or to taste)
- Salt and pepper to taste
Instructions
- Start by peeling and grating the carrots into a large mixing bowl.
- Core the apples and chop them into small, bite-sized pieces, adding them immediately to the bowl with the grated carrots to prevent any browning.
- Finely shred the red cabbage and add it to the bowl, along with the raisins, chopped walnuts, and freshly chopped parsley.
- In a separate small bowl, prepare the dressing by combining Greek yogurt, mayonnaise, orange juice, lemon juice, honey, and a pinch of salt and pepper. Whisk until smooth.
- Pour the dressing over the salad mixture in the large bowl and gently toss to combine.
- Taste and adjust seasoning with more salt, pepper, or honey as needed.
- Let sit for 15 minutes in the refrigerator before serving to enhance flavors.
- Serve chilled or at room temperature, garnished with additional nuts or parsley if desired.
Notes
Chill the salad for 15 minutes to allow flavors to meld. Use sunflower seeds instead of nuts for a nut-free version.
