Crispy Rice Paper Rolls

Delightful crispy rice paper rolls filled with a healthy blend of proteins and fresh vegetables, perfect as a snack or appetizer.

Ingredients

  • 12 Rice Paper Rolls
  • 1 lb. Ground Turkey or Tofu
  • 2 Carrots, grated
  • 1/2 Red Onion, finely chopped
  • 1 cup Mushrooms, sliced or chopped
  • 2 Garlic Cloves, minced
  • 1 tbsp. Ginger, grated or minced
  • 1 tbsp. Olive Oil
  • 2 tbsp. Low Sodium Soy Sauce or Tamari Sauce
  • 1/3 cup Fresh Parsley, chopped
  • Sesame Seeds, for baking
  • 1 tsp. Olive Oil (for sauce)
  • 1 inch Fresh Ginger (for sauce), grated
  • 2 Garlic Cloves (for sauce), minced or grated
  • 3 tbsp. Tamari Sauce (for sauce), Low Sodium
  • 1 tbsp. Agave or Maple Syrup (for sauce)
  • 1-2 tsp. Flour (for sauce), to preferred sauce thickness
  • 1/2 cup Water (for sauce)
  • Salt & Black Pepper (for sauce), to taste

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper for easy cleanup.
  2. Heat the olive oil in a large skillet over medium-high heat. Sauté the garlic, red onion, and ginger for 1 to 2 minutes until fragrant.
  3. Add the ground turkey (or tofu) to the skillet, breaking it apart as it cooks until fully browned.
  4. Stir in the grated carrots, chopped mushrooms, and soy sauce. Cook for a few more minutes until the mushrooms are tender, then remove from heat and allow the mixture to cool.
  5. Soak each rice paper roll in cold water for about 15 to 30 seconds to soften. Place the softened paper on a clean work surface.
  6. Add a spoonful of the turkey mixture to the center and roll the rice paper like a burrito, tucking in the sides as you go.
  7. Place the rolls on the baking sheet seam-side down, brush with olive oil, and sprinkle with sesame seeds.
  8. Bake in the preheated oven for 35 to 45 minutes or until the rolls are crispy and golden brown.
  9. For the sauce, heat 1 tsp. of olive oil in a small saucepan, then add the grated ginger and minced garlic. Sauté briefly before whisking in the remaining sauce ingredients and bring to a boil until thickened, approximately 5 to 7 minutes.
  10. Serve the crispy rolls warm with the sauce on the side for dipping.

Notes

Keep the rice paper moist for better rolling. Can use chickpeas instead of ground turkey for a vegetarian option.
