Crispy and comforting baked chicken cutlets that are easy to make and perfect for weeknight dinners.

Ingredients

  • 2 large Chicken breasts, sliced into cutlets
  • Salt and pepper to taste
  • Garlic powder (optional)
  • Paprika (optional)
  • 1 cup Flour
  • 2 Eggs, beaten
  • 1 cup Panko breadcrumbs
  • 1/2 cup Grated Parmesan (optional)
  • Olive oil spray or a little oil, brushed on top
  • Lemon wedges for serving

Instructions

  1. Heat your oven to 425°F. Place a wire rack on a baking sheet.
  2. Prep the chicken by slicing and pounding the breasts to an even thickness.
  3. Season the chicken with salt, pepper, garlic powder, and paprika.
  4. Set up a breading line: flour in one bowl, beaten eggs in the next, and panko in the last.
  5. Coat each cutlet in flour, then egg, and finally press into the panko.
  6. Place cutlets on the rack and spray or brush with oil.
  7. Bake for 14 to 18 minutes, flipping halfway through if not using a rack.
  8. Rest for 3 minutes before serving with lemon.

Notes

Ensure chicken is patted dry for crispy results. Do not overcrowd the pan.
