- 2 large Chicken breasts, sliced into cutlets
- Salt and pepper to taste
- Garlic powder (optional)
- Paprika (optional)
- 1 cup Flour
- 2 Eggs, beaten
- 1 cup Panko breadcrumbs
- 1/2 cup Grated Parmesan (optional)
- Olive oil spray or a little oil, brushed on top
- Lemon wedges for serving
Instructions
- Heat your oven to 425°F. Place a wire rack on a baking sheet.
- Prep the chicken by slicing and pounding the breasts to an even thickness.
- Season the chicken with salt, pepper, garlic powder, and paprika.
- Set up a breading line: flour in one bowl, beaten eggs in the next, and panko in the last.
- Coat each cutlet in flour, then egg, and finally press into the panko.
- Place cutlets on the rack and spray or brush with oil.
- Bake for 14 to 18 minutes, flipping halfway through if not using a rack.
- Rest for 3 minutes before serving with lemon.
Notes
Ensure chicken is patted dry for crispy results. Do not overcrowd the pan.
