Ingredients

  • Green cabbage, about half a medium head, thinly sliced
  • Purple cabbage, a couple handfuls, thinly sliced (optional)
  • Carrots, 1 to 2, shredded
  • Mayonnaise, 1/2 cup
  • Apple cider vinegar, 1 1/2 tablespoons
  • Dijon mustard, 1 teaspoon
  • Honey or sugar, 1 to 2 tablespoons
  • Celery seed, 1/2 teaspoon (optional)
  • Salt and black pepper, to taste

Instructions

  1. Slice and shred your veggies.
  2. Put the cabbage and carrots in a big bowl.
  3. Sprinkle the veggies with salt and let them sit for 10 minutes, then blot with paper towel.
  4. Stir together mayo, vinegar, Dijon, honey, celery seed, pepper, and salt in a separate bowl.
  5. Pour the dressing over the veggies and toss until coated.
  6. Let it chill for at least 20 to 30 minutes before serving.

Notes

For extra crispness, serve the slaw on ice and dress lightly.
