  • 1 cup Basil pesto
  • 1 cup Heavy cream
  • 1 cup Cherry tomatoes
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). On a baking sheet, place cherry tomatoes, drizzle with olive oil, and season with salt and pepper. Roast for 15-20 minutes.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper and cook for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F.
  3. In the same skillet, add basil pesto and heavy cream, stirring to combine and heat through.
  4. Serve the chicken topped with creamy pesto sauce and roasted tomatoes.
