Ingredients

  • 4 Chicken Breasts
  • 2 cups Baby Potatoes
  • 3 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 1 cup Heavy Cream
  • 1 teaspoon Italian Seasoning
  • Salt and Pepper to taste
  • Fresh Parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the baby potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes.
  3. In a skillet, heat olive oil and sear the chicken breasts for 5-7 minutes on each side until golden. Remove and set aside.
  4. Add minced garlic to the skillet and sauté until fragrant. Pour in heavy cream and stir in Italian seasoning, salt, and pepper. Return chicken to skillet, cover, and simmer on low for 10-15 minutes until cooked through.

Notes
