Instructions
- Season the chicken breasts evenly with Cajun seasoning, salt, and pepper.
- In a skillet, heat olive oil over medium heat, then cook the chicken until golden brown, about 6–8 minutes per side. Remove from skillet and rest before slicing.
- Toast the uncooked rice in the same skillet for about 1 minute.
- Pour in chicken broth, bring to a gentle boil, cover, and let cook for 15–20 minutes until rice is fluffy.
- Stir in heavy cream and Parmesan cheese until sauce is creamy.
- Plate the sliced Cajun chicken over creamy rice and garnish with parsley.
Notes
You can substitute heavy cream with a lower-fat version or a plant-based cream if desired. For a keto-friendly version, replace rice with cauliflower rice.
