Instructions

  1. Season the chicken breasts evenly with Cajun seasoning, salt, and pepper.
  2. In a skillet, heat olive oil over medium heat, then cook the chicken until golden brown, about 6–8 minutes per side. Remove from skillet and rest before slicing.
  3. Toast the uncooked rice in the same skillet for about 1 minute.
  4. Pour in chicken broth, bring to a gentle boil, cover, and let cook for 15–20 minutes until rice is fluffy.
  5. Stir in heavy cream and Parmesan cheese until sauce is creamy.
  6. Plate the sliced Cajun chicken over creamy rice and garnish with parsley.

Notes

You can substitute heavy cream with a lower-fat version or a plant-based cream if desired. For a keto-friendly version, replace rice with cauliflower rice.
