Ingredients

  • ½ cup Orzo, uncooked
  • ½ bunch Kale, ribs removed and thinly sliced
  • 2 Persian cucumbers, diced
  • 1 cup Cherry tomatoes, halved
  • 1 can Chickpeas, drained and rinsed
  • ½ cup Pepperoncinis, roughly chopped
  • 8oz Cooked chicken, chopped
  • 4oz Feta, cubed
  • ½ cup Parsley, chopped
  • 6 tablespoons Extra virgin olive oil
  • ¼ cup Balsamic vinegar
  • 1 teaspoon Garlic paste or 1 clove garlic, minced
  • ⅓ cup Plain Greek yogurt
  • 1 tablespoon Maple syrup
  • 1 teaspoon Kosher salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dijon mustard

Instructions

  1. Begin by blending the dressing ingredients: olive oil, balsamic vinegar, garlic, Greek yogurt, maple syrup, salt, pepper, and Dijon mustard until smooth and creamy.
  2. Prepare the orzo according to package instructions in salted water. Drain and toss with a little olive oil.
  3. Add the kale to a large salad bowl and massage it gently with olive oil and a pinch of salt for 2-3 minutes.
  4. Combine the prepared orzo, cucumbers, cherry tomatoes, chickpeas, pepperoncinis, chicken, feta, and parsley with the kale.
  5. Drizzle the dressing over the salad and toss well until evenly mixed.

Notes

Massage the kale to enhance its tenderness. For a gluten-free option, use quinoa instead of orzo.
