- 8 oz Pasta of choice
- 2 Large onions, thinly sliced
- 2 tbsp Olive oil
- 3 cloves Garlic, minced
- 1 cup Vegetable broth
- 1 cup Coconut cream or dairy-free cream
- Salt to taste
- Pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Cook the pasta according to the package instructions until al dente, then drain and set aside.
- Heat the olive oil in a large skillet over medium heat, then add the sliced onions. Cook, stirring frequently, until they are caramelized, about 20 to 25 minutes.
- Add the minced garlic to the skillet and cook for 1 to 2 minutes until fragrant.
- Pour in the vegetable broth and bring it to a simmer, allowing it to reduce slightly for about 5 minutes.
- Stir in the coconut cream and mix well, cooking for another 2 to 3 minutes until the sauce becomes creamy.
- Add the cooked pasta to the skillet, tossing to coat it in the sauce. Season with salt and pepper to taste.
- Serve warm, garnished with chopped fresh parsley.
Notes
Don’t rush the caramelization process for best results. You can also use almond or cashew cream instead of coconut cream.
