A delightful pasta dish featuring caramelized onions, creamy coconut cream, and garlic for an indulgent yet straightforward meal.

Ingredients

  • 8 oz Pasta of choice
  • 2 Large onions, thinly sliced
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 cup Vegetable broth
  • 1 cup Coconut cream or dairy-free cream
  • Salt to taste
  • Pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Cook the pasta according to the package instructions until al dente, then drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat, then add the sliced onions. Cook, stirring frequently, until they are caramelized, about 20 to 25 minutes.
  3. Add the minced garlic to the skillet and cook for 1 to 2 minutes until fragrant.
  4. Pour in the vegetable broth and bring it to a simmer, allowing it to reduce slightly for about 5 minutes.
  5. Stir in the coconut cream and mix well, cooking for another 2 to 3 minutes until the sauce becomes creamy.
  6. Add the cooked pasta to the skillet, tossing to coat it in the sauce. Season with salt and pepper to taste.
  7. Serve warm, garnished with chopped fresh parsley.

Notes

Don’t rush the caramelization process for best results. You can also use almond or cashew cream instead of coconut cream.
