Instructions
- Heat the olive oil over medium heat in a large skillet.
- Add the chopped onion and garlic, sautéing until they are soft and aromatic, about 3-4 minutes.
- Stir in the dried thyme, rosemary, salt, and pepper, cooking for an additional minute.
- Carefully add the butter beans and vegetable broth, stirring gently to combine.
- Reduce the heat and let the mixture simmer on low for about 10-15 minutes.
- Garnish with freshly chopped parsley before serving. Enjoy!
