Ingredients

  • 1 pound sliced beef sirloin
  • 4 cups chopped bok choy
  • 2 tablespoons vegetable oil
  • 3 cloves minced garlic
  • 1 tablespoon minced ginger
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt to taste
  • Pepper to taste
  • Cooked rice for serving
  • Cooked noodles for serving

Instructions

  1. Slice the beef sirloin thinly against the grain and marinate it in a mixing bowl with soy sauce, salt, and pepper for about 5 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat until hot.
  3. Add the marinated beef to the skillet and stir-fry for about 3-4 minutes until browned and cooked through; set aside on a plate.
  4. In the same skillet, sauté the minced garlic and ginger for 30 seconds until fragrant.
  5. Toss in the chopped bok choy and stir-fry for another 3-4 minutes until just tender yet still crisp.
  6. Return the cooked beef to the skillet and mix in the remaining soy sauce and oyster sauce.
  7. Create a cornstarch slurry by mixing cornstarch and water together, then pour this into the skillet and stir until the sauce thickens, about 1 minute.
  8. Adjust seasoning with salt and pepper as needed, and serve hot over cooked rice or noodles.

Notes

Marinate the beef for at least 5 minutes for enhanced flavor. Serve additional sauces on the side for extra seasoning.
