- 1 cup cooked quinoa (divided)
- 1 (15-ounce) can black beans, rinsed and dried
- 2/3 cup raw pecans
- 1 Tbsp coconut or avocado oil
- 1 heaping cup sliced and peeled sweet potato (cut into 1/4-inch rounds)
- 2 heaping cups thinly sliced cremini or button mushrooms
- 2 Tbsp coconut aminos (optional)
- 1/2 tsp sea salt (plus more to taste)
- 2 ½ tsp chili powder
- 2 ½ tsp cumin powder
- 3 Tbsp vegan-friendly BBQ sauce
- Vegan-friendly hamburger buns or lettuce wraps (optional, to serve)
- Veggies of choice (e.g. onion, cabbage, tomato, pickles) for garnish
Instructions
- Cook quinoa according to package instructions, then set aside to cool. Preheat your oven to 350°F. Spread rinsed and dried black beans on a lined baking sheet and bake for 6 minutes.
- Add pecans to the baking sheet with the beans and bake for an additional 10 minutes until golden brown. Remove from the oven and let cool, then increase your oven temperature to 375°F.
- In a skillet over medium heat, add oil and the sliced sweet potatoes. Cook covered for 3-4 minutes, then flip and cook for an additional 3-4 minutes until tender. Remove from the pan.
- In the same skillet, add the sliced mushrooms and coconut aminos. Sauté for 4-5 minutes until browned and fragrant. Set aside.
- In a food processor, combine the cooled black beans and pecans. Pulse into a loose meal, then add the cooked sweet potatoes, mushrooms, half of the quinoa, salt, chili powder, cumin, and BBQ sauce. Pulse until all ingredients are combined but still have some texture.
- Transfer the mixture to a mixing bowl and incorporate the remaining quinoa. Season to taste with additional salt or BBQ sauce as needed.
- Divide the mixture into four equal portions and shape them into patties. Refrigerate the patties for about 30 minutes to firm up before cooking.
- Heat the skillet again, add oil, and cook the burgers for 4-5 minutes per side until crispy and golden. Glaze with BBQ sauce and transfer to the oven, baking for another 10-15 minutes or until browned.
- Serve the Smoky BBQ Black Bean Burgers on buns or wrapped in lettuce with veggies of your choice.
Notes
Allow burgers to chill before cooking for better texture. You can substitute black beans with other beans like pinto or chickpeas for a twist.
